Granola with berry compote

This recipe contains a source of protein, complex carbohydrates and healthy fats making it a really great go to breakfast. It’s perfect for those busy mornings! The Driscoll’s® Victoria™ Sweet Blackberries and Driscoll’s® Maravilla™ Raspberry compote is packed with Vitamin C to help support your immune system this winter.

What to do

Preheat the oven to 180˚C.

Add the oats, almonds, walnuts, pumpkin seeds, salt and cinnamon to a bowl and combine well. Then pour in the coconut oil, maple syrup and cinnamon. Mix well.

Turn the granola out onto a lined baking tray and bake for 25-30 minutes. Ensure you stir regularly to prevent burning. Turn the oven off and leave to cool inside the oven for a perfect crunch!

In the meantime, add the Driscoll’s® Victoria™ Sweet Blackberries, Driscoll’s® Maravilla™Raspberries, vanilla extract and orange juice to a pan and heat through over a low light for 5-10 minutes until the berries soften. Crush them with the back of a spoon. Once they’re crushed, allow to cool

Once the granola has cooled stir the raisins through. Pour into a bowl and serve with the compote. You can also add Greek yoghurt or vegan alternative should you wish.
